Merciful God, You are great in compassion and Your tenderness for us is without measure. We ask You to give us today our daily bread, and also provide for the needs of all of Your hungry children around the world. Through Christ Your Son and Our Lord. Amen.

A New Menu?

I know I'm over thinking this menu business, but there I was at the store yesterday and sifting through all my pins on Pinterest to find the recipes, then toggling back and forth, all the while keeping an eye on what was going into my two college boys' carts!

I think I may have found a solution. It's called Say Mmm. I can create a menu -- so easy. Then I put the recipes in "Ideas" and can even link the recipe to the specific date, right after I save it. The hardest part was figuring out how to post it here, and I found that, in, of all places, the print command! I hope this works. I can't believe how complicated this is in this day and age!

The only complication with this method is I have to go to Say Mmm to get to the links. Sigh.

Menu Planning

I have been getting better at meal planning now that everyone is back in school. I inventoried the freezer and pantry and I am eating from the stores, so to speak. I use my Catholic Daily Planner to write my meal plans down, but sometimes I'm at the store and my calendar isn't with me (I plan and I plan, but never get it quite all the way there -- something is always missed).

I decided to write my calendar on Google calendar so I can access it with my phone. And now you can see it, too, if you are so inclined. I will update it as I fill in more dates.

Just out of curiosity, can you see the menu items on my calendar? Because when I am on my phone, I can't, which kind of defeats the purpose.

Red, White and Blue Menu

Just a family gathering will be going on at our house this year, the best kind in my opinion. A few people are bringing dishes and I am planning to keep everything pretty simple...just what I need right now. Hopefully the weather will cooperate and we can sit creekside and just enjoy the summer evening, and the home-style fireworks.

Hot Corn Dip and chips
Salsa and chips

green salad with Buttermilk Ranch
sliced watermelon
bread

Chocolate Cheesecake

Iced Tea

menu...June week 3

My husband decided last week that we absolutely have to replace our living room, dining room, kitchen and front hall floors NOW. I thought folks were supposed to mellow as they age, but my husband seems to get more uptight as he gets older. When he wants to do something, it gets done now, no matter what other needs there are. It's veeeeerry frustrating.

So last week we shopped for wood floors, compromised on color (I won -- Ol' Virginia Gunstock) and structure (he won -- solid wood), and found an installer. This week we have to pack up everything in the kitchen island, pantry, and china cabinet, move out the stove and fridge, and tear out the old floor and toe kicks. No problem (sarcasm). Next Monday the installer will begin putting down the new floor.

So this week's meals have to be simple, and next week's meals will probably be take-out. Ugh. If you notice a lot of eggs on my menu this week it's because I have started buying three dozen a week from a friend who has a lot of extra eggs, and I haven't kept up on the consumption.

Monday: Chilaquiles, fruit salad

Tuesday: Pork Tenderloin with Korean Wet Rub, fried rice, broccoli

Wednesday: Quiche Lorraine, green salad, bread

Thursday: Grilled chicken, Mac and Cheese, vegetable

Friday: Tostada Pizza

Mother's Day Meals

Hi folks. I know it's been a while since I posted here. I'm still around, and still cooking, but not having much time for photographing and tracking recipes.  Even when I try something new and we love it, I'm not making notes on what I'm doing.

But today I'm just posting my Mother's Day plans here for safe keeping, because my brain is not a safe place to park anything these days, not if I want to remember anything for longer than 30 seconds. I hope you plan to have a lovely, relaxing weekend. I know we've chatted before about making Mother's Day look like you didn't lift a finger, and that's what I'll be doing this weekend, both in entertaining my mom for brunch and transporting dinner to my in-law's home. Saturday is going to be a busy day!

Brunch

Strawberry Yogurt Parfaits
Mimi's Carrot Bread (this bread is so good!)

Dinner

Bread and Butter
Chocolate Mayonnaise Cake with Burnt Sugar Frosting

menu...February week 4

I am hopeful that soon I'll be back with a real recipe. I've been baking all of our bread for weeks now and I have a few recipes to share -- I'm especially excited about the sourdough recipes I've been using.

I also have a new "cookbook" on the counter and hope to try some recipes soon -- it's Home Dairy -- and since several of us are Vitamin D deficient I am hopeful that I can boost our intake with some good dairy, since the sun is not really helping us out.

Monday
Leftover veggie soup and sourdough bread
(This is a great trick for using leftover veggies -- I add any leftover dinner veggies to a bag in the freezer, and any good broth from cooking meat or veggies -- like today I used tomato base and cabbage from cabbage rolls -- put it all in the slow cooker and use an immersion blender at dinner time. Yum.)

Tuesday -- Happy Birthday Joshua!
Surf and turf -- grilled steak and barbecued shrimp, twice baked potatoes, green salad, Chocolate Cheesecake

Wednesday
Beef burrito bowls (leftover shredded beef in the freezer), shredded cabbage, corn, rice, salsa

Thursday
BBQ chicken comfort food, mashed potatoes, pan-fried green beans

Friday
cheese pizza

Sunday, February 17, 2013

menu...February week 3

Monday
lasagna, a vegetable low in Vitamin K, fruit for dessert

Tuesday
corned beef hash with corn and red pepper, eggs

Wednesday
breakfast for dinner (mostly cleaning out the freezer and using bread for French toast , frying ham slices, and eating peaches frozen last summer)

Thursday
burgers, baked sweet potatoes, fruit salad

Friday
black bean soup and fresh salsa, bread

an excuse to eat yummies for dinner

There is not much I like less than professional sports (with the exception of baseball -- go Reds!), except maybe the hype that comes with, but I share my hearth and home with three big men-boys and a man-husband, so today is a big day.

I will find a quiet corner to knit or sew and watch Tess of the Durbervilles, or an old musical with my sweet girl, Faith, but only after I prepare a table full of tasty yummies for the guys to enjoy while they watch football commercials.

Just in case you are still looking for a yummy recipe or two, I am sharing what my guys will be enjoying this evening:

Muffaletto
(I don't usually use a recipe, but mine is similar to Lidia's using olive salad number 2)

Gooey Chocolate Skillet Cake and vanilla ice cream

Menu...January week 4

I tried to get some recipes post this weekend,  but Blogger has been eating more recipes than my teenage son. There is just nothing like getting ready to click the post button, after typing for an hour, and have it all disappear, to make you want to kick a computer. Urg.

So today you just get my menu, if Blogger allows.

Menu...January week 2

I am working my way back into the saddle. On the heels of Christmas closely followed the hospitalization of my mother, (fortunately she is on the mend and I am worrying a little less each day) and then New Year's Eve and New Year's Day and then another weekend of festivities, requiring cleaning and cooking. I feel like I gave two full weeks to hosting events at my house. Heavy sigh.

Now it's back-to-school (homeschool, high school and college) and back to structured days (as structured as one can get with children in all sorts of schedules). Cooking dinner the past few days has been a pleasure -- with comfort foods and just my immediate family to feed. I am mostly trying to use up some ingredients that were bought over the holidays and not completely consumed. I borrowed a book from the library on freezer meals (mostly where you double a meal and freeze half, but also with some tips for freezing parts of meals for later assembly) and am hopeful that next week I can really make a few meals to stash away for a rainy day.

I plan to share the pot roast recipe that I made on Sunday. It was really delicious, and you always use a new pot roast recipe, right?

This week's menu:

Saturday:
homemade pizza, Twelfth Night Cake

Sunday:
pot roast, polenta, bread

Monday:
omelets, sausage patties, cinnamon scones

Tuesday:
green beans, potatoes, sausage (cut up beef franks for the kids), cornbread

Wednesday:
Beef and noodles (using up leftover pot roast), peas and carrots, fresh fruit

Thursday:
grilled cheese and soup

Friday:
chicken and yellow rice, fruit salad

the absentee blogger returns

AKA...thoughts on Thanksgiving

Well, here I am, less than a week from the big food holiday of the year. I think Thanksgiving is one day which separates the cooks from the...well...reheater-uppers, I guess you could call them. Those who buy gravy and grocery store brown and serve rolls. I am not at all thumbing my nose at those who buy jarred cranberry sauce that stays in the shape of the can when it slides out (that's all my mother ever served), or Cool Whip for their Mrs. Smith's pumpkin pie. Ya know, if someone was cooking, or even reheating, for me, I'd be a real happy camper.

As it is, I am contemplating a week of cleaning, and prepping, and finally cooking Thanksgiving dinner for 20 people. It doesn't help matters that I am in a chocolate coma this evening from the most incredible pie one of my husband's coworkers made for our anniversary yesterday (yes, 27 years). Isn't that sweet? She made us a homemade pie in a real glass dish, with a real crust, and real, unbelievable chocolate cream filling, and real whipped cream. I am working very hard on not eating the entire pie one sneaky bite at a time. Yum.

Back to Thanksgiving. I have the problem that my people want to eat the same thing every single year. They are so dull. If I try to even sneak some orange zest into the sweet potato casserole, they protest. Same cranberry sauce, same vegetables, same everything. I have decided that I can probably vary the bread, since that is not a crucial part of Thanksgiving dinner for my people (yours might be different). I am going to work on a recipe for bacon cornbread tomorrow or Monday. I also want to play around with a sweet potato dinner roll. There is lots of baking ahead.

My menu is fairly well set (since my people are so set), and the relatives are apparently all bringing beverages. Yup. I plan to roast one turkey on Wednesday, and then another on Thursday. I'll make gravy on Wednesday and store the turkey in the gravy in the fridge. I'll heat it up on warm in the crock pot. I am hoping it does not taste leftover, but I suddenlyhave a lot of men coming for dinner and I don't think the 25 pound turkey I planned will be enough.

Almighty and ever living God, we praise you and give thanks for Our Daily Bread. You always provide for us, Lord, never leaving us for a moment. We thank you for this food, and for safely bringing our family and our friends to this meal. We thank you for our work, our play, and our health. We ask for your blessing, especially on those who most need your mercy. We ask this in the name of Your Son, Christ Our Lord, Amen.

Thanksgiving Menu

When I am making my dinner, however, it's nice to be able to click here and click to my recipe or the recipe I am using.
