We had a good week, food-wise, at our house this week. I really enjoyed grilling for most of the week, and Thursday's Carolina Chops, especially, were awesome. I bought some thick boneless chops at Giant Eagle (they were probably about 6 oz. each) and they were so tender and juicy. I didn't even eat one -- just nibbled off Peach's plate -- but the boys, including a visiting friend, and Doug thought they were awesome. About 40 oz. of pork disappeared in no time. They were so popular, in fact, that this week's birthday boy wants them for dinner.


Saturday
Lunch: Skyline Chilitos
Dinner: Buffalo Chicken Pizza, Pepperoni, Basil and Cheese Pizza

Sunday
Brunch: Bacon and Potato Frittata, Cinnamon Bun Bread
Dinner: BBQ Chicken, Corn, Avocado and Tomato Salad, Marinated Green Beans

Monday -- Feast of St. Clare
Lunch: Roast Beef sandwiches
Dinner: Asparagus and scrambled eggs with bacon, Ciabatta

Tuesday
Lunch: Quesadillas
Dinner: Bobby's Goulash, garlic bread, salad

Wednesday
Lunch: Chicken Noodle Soup
Dinner: Grilled Italian Sausage sandwiches, Sauteed onions and peppers, Pasta Salad

Thursday -- Feast of St. Maximillian Kolbe
Lunch: Pancakes and sausage
Dinner: Chicken Chop Suey
Polish dessert TBA for St. Maximillian Kolbe Feast Day

Friday -- The Feast of the Assumption and my 12 year old son's birthday
Lunch: Chicken Fingers
Dinner: Birthday boy's pick -- Carolina Pork Chops, Baked Potato Skins, Fresh strawberries, Rita's
