Fresh Fruit

Have you been enjoying summer's bounty? At this time of year I'm like a kid in the candy store with all the fresh fruit that's available. Last night we ate an entire honeydew with our Carolina Pork Chop dinner. It was so juicy and sweet. I feel like I have to eat an entire year's worth of fresh fruit right now, because in no time we'll be back to oranges, apples and sad, sour grapes.
The other night I put these simple kabobs together and Peach said, "You did a great job mom." It's so easy to make some people happy. All of the children ate one for dinner, and a few went looking for more. What a simple side dish. I also served fresh mango for dinner that night (the pieces weren't big enough to skewer) and they thought it tasted great with the chicken I served. Who'd a thunk it? They were clamoring for mango salsa -- where do they get this stuff? Too much Food Network.
One more note on fresh fruit. Last week I noticed that the nectarines I bought were sporting this little sticker. This week the sticker said "grown in California." I'm so pleased to see my produce coming from the U.S.
