Well, our plans for the holiday weekend were supposed to be...quiet weekend, fireworks and backyard fire, simple grilled food, lots of ice cream cones. One phone call and that's all in the can (well, most of it). We're now having a houseful and just a few days before my surgery. Not exactly what I would plan given the choice, but when family calls to say they're coming, I'm not one to turn them away.
The menu on the Fourth, previously a simple meal of grilled shrimp, salad and bread, has now been changed and expanded. We'll have marinated and grilled pork tenderloin, fresh bread, pasta salad, baked beans, and a few desserts to chose from. On Saturday, we'll have homemade pizzas and green salad. Oh well, I'll rest later.

Marinated Grilled Pork Tenderloin (recipe below)
Pasta Salad
(something like this but I'll add a little balsamic vinegar, kalamata olives and zucchini)
Baked Beans
Fresh Bread
Cream Filled Chocolate Cupcakes
Cheese Tarts with fresh Blueberries and Strawberries

1 ½ cup soy sauce
½ cup brown sugar
3 T. molasses
¼ cup bourbon
2 pork tenderloins
Marinate overnight and bring to room temp. before grilling.
Grill until done.
