This coming week we have a few fun events on the calendar and one big feast day. Our weekend is jam-packed with evening events, one of which is a big family potluck at our house. We'll have lots of kids and three generations enjoying each other's company. I'm fixing a few pasta dishes and everyone else will fill in with bread, salads and dessert. Good fun!
St. Bernadette's feast day is celebrated this week, and since I used several of my standby French recipes (at least the ones the kids will eat) last week, I'm just going for the dessert celebration this week.
Our blessed Holy Father's birthday is also celebrated on Wednesday, so we'll likely stick some candles in our scoops of ice cream and sing "Happy Birthday" to our Pope Benedict.
I'm trying a few of My Recipes' Budget Dishes (Wednesday and Friday) that were sent to me in an email this week. I'll let you know if any of them turn out to be winners.
Saturday
Lunch: Pizza
Dinner: Birthday Party
Sunday
Lunch: grab a bite out
Dinner: Big family Potluck; I'm making regular Lasagna, Bow Tie Lasagna, and this bread
Monday
Lunch: Chicken Noodle Soup
Dinner: Garlic Pork Roast, mashed potatoes, glazed carrots, Tapioca Pudding
Tuesday
Lunch: Tuna and Bean Salad
Dinner: Chicken Fideua (something like this but jazzed up a little for the adult eaters), salad
Wednesday - Feast of St. Bernadette
Lunch: Cheesy Cracker Melts with ham or bacon bits, veggies and dip
Dinner: Ham Hocks and Beans with rice, salad, Gaufrettes, French Vanilla Custard Ice Cream (I know, I'm stretching it)
Thursday
Lunch: sandwiches
Dinner: Grilled Pork Chops with Hoisin Molasses Barbecue Sauce, baked potatoes, sliced cucumbers and fruit
Friday
Lunch: baked potatoes and salad
Dinner: Tuna Cornbread Cakes, Lemon Aioli, Roasted Sweet Potatoes, Angel Food Shortcake
