I don't know about you, but I have a big bowl of hard-boiled, colored eggs in my fridge. I'm guessing you do, too. This week will present many opportunities for yummy egginess, but for lunch today I made my favorite take on the old diner favorite -- egg salad on white.
You might have some ham leftover from your Easter dinner, too, and if that's the case, you can whip up a batch of this savory salad. You can skip the ham and it's still a tasty sandwich filling, but I really like the addition of the ham. Lettuce is optional for me; Faith ate the picture sandwich and she's a lettuce girl.
Ham and Egg Salad
makes enough for three sandwiches
Printer version
4 hard boiled eggs, finely diced
1/4 c. finely diced ham
2 T. minced onion
1 T. pickle relish (I like sweet)
2 T. mayonnaise
1 t. Dijon mustard
salt and pepper to taste
Stir all ingredients together and serve on white toast with or without lettuce.

I admit, I am not a big fan of egg salad. I can maybe eat one sandwich, and I'm done for another year ~ LOL! But I am going to try your recipe. It seems like you've doctored it up a bit with the addition of ham, onion and pickle relish ~ yummy! I think I'm going to like this better. Thanks for sharing, Barbara!
I'm lucky not to have an abundance of hb eggs. I boiled them Saturday, but didn't get to dye them. I asked Katie to dye them with the kids on Sunday while I was cantoring at Mass, and I came home to find them boiling again! Most of them broke, and of the 11 that got dyed, they sat around in the hot house all afternoon....I don't think we'll eat them. Lol.
I shall try this tomorrow. I've never made egg salad with relish before. Sounds good!
I hope you like it, Sarah. I love all egg salad, so I'm easy to please!
Sara, I think those are best placed in the trash! ;-) You can always boil more!
Let me know what you think, Michelle.
I like the relish, Barb. Don't think I'll make egg salad without it ever again.
You "Angel" Eggs look great! Never thought of using ham in egg salad. But I don't think I can make it any other way now!
