Whoopie Pies

My college boy came home on Saturday because he just knew how much I missed washing his clothes all week. I actually didn't even mind doing his laundry and I heard lots of funny stories about his new life on campus. He's just amazed at everything and it's funny to hear his perspective on all those things that haven't changed much since I was on campus 20 plus years ago. I wanted to send him back to the dorm with some goodies, so I made a double batch of Whoopie Pies.

If you've never experienced Whoopie Pies, they are two chocolate cakes with light sweet icing in between. They are a great bake sale item because they are very substantial. They are easy to make, though -- just like making cookies. I scoop the icing into a ziploc bag and snip off the corner for easy squeezing after the cookies cool. They are not much to look at, but they are really yummy. I won't tell if you eat one for breakfast, if you don't tell on me!


Whoopie Pies

2 cups flour
⅔ cup cocoa
1 t. baking soda
½ cup hot water
⅔ cup milk
½ cup shortening
1 cup sugar
1 egg

¼ cup butter, softened
½ cup shortening
1 t. vanilla
3 cups powdered sugar
3 to 4 T. milk


Preheat oven to 350 degrees F.
In a medium bowl, stir together flour and cocoa; set aside.
In a small bowl, dissolve baking soda in hot water; add milk; set aside.
With electric mixer, beat shortening and sugar until fluffy.
Add egg and beat another minute.
Mix in half the dry ingredients, then half of the wet ingredients.
Repeat.
Drop batter by heaping teaspoons, 2 inches apart,
on ungreased baking sheets.
Bake for 8 minutes. Cool.

For frosting, beat butter and shortening in mixing bowl.
Add vanilla, powdered sugar and beat until combined.
Add milk.
Beat until fluffy.
Spoon frosting into a zipper bag and cut off the corner.
Squeeze frosting onto a cookie bottom and top with another cookie.

LOVE Whoppie pies!!! The best ones I have ever had was in Intercourse, PA. Have you tried the pumpkin ones?

Charlotte -- there are no calories in whoopie pies. That's why we say "whoopie!"

Meg, I have never tried pumpkin, but that sounds like something my gang would love! I'll have to find a recipe.
