Weekly Menu

I really got slammed this week and dinner suffered. It was on the table every night, but rarely with the scheduled dessert and a few times it was pretty darn late. With Doug's job change, I have to drive an hour round trip every afternoon to pick up my high schooler, and sometimes, if he's doing his homework in a teacher's classroom, I might have to wait 15 to 30 minutes for him to come out of school. That's a big chunk of my afternoon, and it's especially disruptive in the late afternoon. So this week, I'm simplifying my meals even more. Hopefully this will just be until we get used to the schedule, but I may be using the crock pot a lot more this year.

Saturday
Lunch: Skyline chili
Dinner: Santa Fe Pork Chops and Firecracker Salsa, oven roasted potatoes, corn on the cob

Sunday
Brunch: we're attending this event Sunday after Mass
Dinner: my brother's birthday party -- mom is cooking

Monday
Lunch: leftovers or Mac 'n' Cheese
Dinner: Green beans, Potatoes, and Sausage, Beer Bread

Tuesday
Lunch: Bagels and cream cheese
Dinner: Mozzarella Chicken Sandwich, salad

Wednesday
Lunch: Chicken wrappers
Dinner: Michelle's Crock Pot Turkey and rice, buttered corn

Thursday
Lunch: Wendy's chili
Dinner: Donatos style subs at home -- I'll post the recipe, crunchy veggies

Friday
Lunch: tomato soup and grilled cheese
Dinner: Linguine and clam sauce, crusty bread
