Weekly Menu

You guys have been awfully quiet out there. Are you all on vacation? I contemplated not posting my menu this week (actually I thought about not posting it any more, period) but I honestly have to admit that I really post it for myself. It gives me a record of what we have eaten and when, and by linking to recipes on other websites and blogs, I can find something easily again if we like it. So, I understand if you don't read on my menu days. I won't take it personally. :o)

I'm trying to keep things simple this week as we move into the hot month of July and I continue to try to spend time each day putting food away in the freezer. I'm beginning to feel like a squirrel. Sadly, I know my stash won't last all winter!

Saturday
Lunch: Skyline chilitos (made at home)
Dinner: My nephew's birthday party -- my offering is Mud Slide Cake. It's made with a boxed cake mix and canned frosting, but it's a favorite of my kids.

Sunday
Brunch: Blueberry French Toast -- we didn't have this last Thursday night, we had eggs and ham and fruit instead.
Dinner: Grilled Chicken Sandwiches, Pasta Salad, melon

Monday
Lunch: French bread, cheese, meat
Dinner: Steak Sandwiches, Twice Baked potatoes, salad

Tuesday
Lunch: Cheese pizza
Dinner: Brats, Bacon and Onion potato salad, fruit

Wednesday
Lunch: Ham Cubans
Dinner: BLT and Egg Sandwiches, Cucumber Tomato Salad

Thursday
Lunch: picnic
Dinner: Salmon Pesto Pasta, bread

Friday -- July 4
Lunch: grilled hot dogs, chips, watermelon
Dinner: Hot Pepper Shrimp (I'll post this wonderful recipe), roasted potatoes, green salad

Quiet, but reading!!
I post my menus for the same reason. I like a record of what I'm making and it helps me plan out for other times. It also helps me find a recipe quickly when it's time to make dinner. I just bring the laptop into the kitchen and work from there.

Barbara, your Blueberry French Toast is heavenly! I've made it several times and it's always a hit (at home and with friends).
