Weekly Menu



Well, there's not much exciting on the menu this week. We have a couple of busy evenings to work around, with easy meals on those nights. I'm trying just a few new recipes this week, on Monday night and Wednesday. And I'm trying a new dessert on Sunday. The kids have been asking for a Baked Alaska, so I'm going to give it a whirl. The recipe I chose is a cross between a pie and a traditional Baked Alaska. I'll let you know how it turns out.

This past week we thoroughly enjoyed Sunday's Spring Risotto with Peas and Zucchini (in fact, that entire meal was a hit), Tuesday's Cappuccino Coolers (I've already have requests for them again) and Thursday's Tortellini Soup (very tasty!).

Saturday

Lunch: Skyline chili
Dinner: Pepperoni Stromboli and Chicken Philly
Stromboli, Caramel popcorn

Sunday:
Lunch: Waffles and Ham
Dinner: Fajitas, Spicy pintos and rice, Lemon Meringue Baked Alaska

Monday
Lunch: Bagels and cream cheese
Dinner: Szechuan green beans with ground pork, brown rice,
Sunbutter Puppy Chow

Tuesday
Lunch: Giada's Mozzarella Sticks
Dinner: Spaghetti and sauce, garlic bread, salad, Carrot Cake cupcakes with Cream Cheese Frosting

Wednesday
Lunch: School at Grandma and Grandpa's and out to lunch
Dinner: Black bean and Chicken Chilaquiles, buttered corn, Root Beer floats

Thursday
Lunch: Rachel Ray's macaroni and cheese
with diced ham
Dinner: Teriyaki pork chops, Roasted sweet potatoes
, fruit salad, Fudge Brownie Cookies

Friday
Lunch: Birds' Nests
Dinner: Overnight French Toast, fresh fruit (the big boys and I are headed to the Mom Prom)

Not much exciting?! I have been craving carmel popcorn for some while...but I still haven't picked up the darn corn syrup!! How do you think it'd turn out minus corn syrup? Only kidding...I received some chocolate today and that should hold me over until I can get to the store!! :o)
