Weekly Menu


Chicken and ground chuck are the grocery meat specials this week, so I've planned my menu around them. My refrigerator is on the fritz right now, but the repairman is expected Monday afternoon. I am fortunate to have an extra fridge in the basement, but is does make it a little inconvenient to have to shuttle in between the basement and the kitchen. I'm hoping for the best, though, and planning accordingly.

The Pork Roast from tonight was good and there's enough left to make pulled pork sandwiches this week.

Monday

Lunch: Chicken strips, carrot sticks and ranch dressing
(packers: roast beef and cheese sandwich, carrot sticks and ranch dressing, candy bar
Dinner: Spanish Beef and Rice, vegetables, Carrot Apple Cake with Cream Cheese Frosting

Tuesday
Lunch: Leftover pizza
(packers: roast beef and cheese sandwich, chips, cookies)
Dinner: Caesar Grilled Chicken, roasted potatoes, broccoli, Cookie Brittle

Wednesday
Lunch: Birds nests
(packers: Ham and cheese sandwich, chips, candy bar)
Dinner: Chili, cornbread, Caramel Apple Bars

Thursday
Lunch: Cheese quesadilla
(packers: Ham and cheese sandwich, carrots and ranch, cookies)
Dinner: Mexican Dinner, fruit, vanilla pudding

Friday
Lunch: Bagels and cream cheese
(packers: PB & J, chips, fruit)
Dinner: Gnocchi and sauce, salad, bread, ice cream

Saturday
Lunch: Skyline chili
Dinner: Pizza, Apple Dumplings

Sunday
Lunch: Breakfast sandwiches, fried potatoes
Dinner: Pulled pork sandwiches, potato skins, cole salw, Pumpkin Pie

I have a recipe for BBQ pork sandwiches, but I would love to see your recipe for pulled pork. Do you use the leftover pork roast?
