Weekly Menu


I tried to simplify my menu little bit this week to accommodate some busy evenings. We'll be celebrating Labor Day with traditional cookout fair -- guacamole burgers, corn on the cob, strawberry pie. The pie is a favorite of mine -- sweet, creamy filling and fresh strawberries on top. I'll try to remember to take pics and post the recipe.

Giant Eaglehad some good meat sales this week -- which I based most of my menu on. They had ground chuck on sale, thus the burgers and the Honey Garlic Glazed Meatballs -- that's a new recipe, and I'll let you know what I think. Pork blade steaks were also on sale -- $1.89 a pound. Marinated, these are really good on the grill, and I think just as good as beef steak. But, can you imagine getting beef steaks for $1.89 a pound? Monday's fresh Italian sausages for lunch were on sale as was the pre-cooked shrimp for Friday's Shrimp Fried Rice and Egg Rolls. Since the chicken for Tuesday soup is already in the freezer, all of the meat for this week's meals was had for under $20 -- for a family of six.

Monday -- Labor Day
Lunch: Sausage Sandwiches, chips
Dinner: Burgers with Guacamole, baked potatoes, sweet corn on the cob, White Chocolate Berry Pie

Tuesday
Lunch: leftovers
(packed lunch -- roast beef and provolone sandwich, yogurt, caramel puff corn)
Dinner: Tortilla Soup, Hearth Bread, Flan

Wednesday
Lunch: Chicken Noodle Soup
(packed lunch -- ham and Swiss sandwich, Cheez-its, carrot sticks, candy bar)
Dinner: Waffles with fruit

Thursday
Lunch: Cheese Quesadillas
(packed lunch -- roast beef and provolone sandwich, chips, yogurt, cookies)
Dinner: Honey Garlic Glazed Meatballs, rice, stir fried vegetables, Apple Betty

Friday
Lunch: Tomato Soup
(packed lunch: PB&J sandwich or peanut butter cracker, yogurt, cookies)
Dinner: Shrimp Fried Rice, Egg rolls, Chocolate Chip Cookie Bars

Saturday -- Mother Mary's Birthday
Lunch: Skyline Chili
Dinner: Pork Blade Steaks, Blueberry fruit salad, Twice Baked Potatoes, Chocolate Covered Oreo Cookie Cake

Sunday
Lunch: Eggs Benedict
Dinner: Grandpa's birthday party

There will probably be Eggs Benedict here for lunch on Sunday as well, since TheDad is hosting a brunch for the Boy Scout leaders.

I am pretty darned impressed with the $20.00 weekly meat expenditure for a family of six. I'm not sure I could do that well cooking for (now) only three people. I'm also interested in the caramel corn - I have break-y teeth, so I can't usually eat regular popcorn, but this sounds good as a snack and to send in a lunch bag as a treat.

Annie -- My oldest son has braces and normally would not be able to eat Caramel Corn, but I think because the puff corn absorbs some of the syrup and then you bake it -- the result is more crunch than sticky. It's about the crunch of a potato chip -- no harder and not sticky.
