Apple Betty



Well, she's not much to look at, but Betty is a favorite at our house. In fact, Betty is the subject of a funny memory (not so funny then) from early in my marriage.

When I was newly married, I tried very hard to be a good cook. My mother-in-law spoiled my husband and he was used to eating pretty well (or at least in his 20/20 memory he did). He was also used to eating dessert every night. And I knew that one of his favorites was Apple Betty.

Well, it didn't occur to me that there was only one specific kind of Apple Betty he would eat. That's like saying you will only eat one kind of apple pie. How obnoxious. Well, I made Apple Betty one night for dessert and when I placed his bowl in front of him, he promptly said, "That's not
real Apple Betty."

Well, what he meant was, "That's not like my mom's Apple Betty."

Them's fightin' words in the first year of marriage. And I believe that's exactly what I did, except my version of fighting was just not talking. And I think I probably didn't make Apple Betty again for a few years. At least until I had the guts to ask his mom for her recipe. Apparently her recipe did not contain oatmeal.

Now, I make Apple Betty at least once a month. It's about as easy a recipe as they get. My sons say it's apple pie without the crust. And since they eat the filling out of the crust (why do they do that?) Betty is just perfect for them. We serve it with a little half & half on top. It's perfect comfort food. You might be tempted to add cinnamon, but don't do it. Betty is perfect just the way she is.



 
Apple Betty

1 stick butter
¾ cup flour
1 cup brown sugar
6 apples peeled and chopped


Place apples in a small casserole dish or 9 x 9 glass pan.
Cut butter into sugar and flour and sprinkle on top of apples.
Bake for 45 minutes at 375 degrees.
Serve warm or cold, with whipped cream, ice cream or half & half.

Your husband sounds a lot like mine, only it wasn't his mother it was his Grandma. If its just like Grandma use to make its a winner. If I even look like I'm going to tweak the recipe a little he'll glare at me and say "Don't mess with it"!

Yes it can be a field of land mines -- I've been married almost 23 years and sometimes still I step on one. I do have a sense of humor though, and last night when my honey kissed me after dinner, he said, "Thanks for the real Apple Betty."

Awwwwwww, Barbara your comment is so cuuute. We just got back from the DQ which will be closing in 2 weeks. The kiddos got Pumpkin Pie Blizzards. Tasted exactly like pumpkin pie with whipped cream. SO I won't be making Apple Betty's...but we do still have fresh apples, might have to later this week.
