Some changes this week -- we are severely simplifying dinner time at our house. My young high school freshman has come home every day with loads of homework that he needs "counsel" on. He starts before dinner, because even beginning before dinner, he's still not finishing until 10 p.m. I notoriously cannot do two things at one time, so, dinner needs to be ready when he walks in the door, or extremely simple. Thus, I'm using the crock pot a few times this week, and having a few really easy dinners. Until our equilibrium balances this school year, this will be our norm -- I'm trying not to lose my mind.
Monday -- Feast of St. Robert Bellarmine
Lunch: leftovers
(packers: Turkey and Swiss, chips, yogurt)
Dinner: Spaghetti and sauce, bread, biscotti and ice cream
Tuesday
Lunch: Cheese quesadillas
(packers: Turkey and Swiss, yogurt, cookies)
Dinner: Spicy Shredded Chicken Tacos, cabbage and tomatoes, Mexican rice
Wednesday
Lunch: Cheesy Enchilada Soup
(packers: Ham and Cheese, carrot sticks, chips)
Dinner: Overnight French Toast, sausage
Thursday
Lunch: Bird's Nest
(packers: Ham and Cheese, yogurt, chips)
Dinner: Crock Pot Chicken and Dumplings, steamed carrots
Friday
Lunch: Bagels and cream cheese
(packers: PB&J, celery sticks, yogurt)
Dinner: Tuna Noodle Casserole, peas and carrots, Nancy's sweet muffins
Saturday
Lunch: Skyline Chili
Dinner: BBQ Beef sandwiches, 0nion rings, cole slaw
Sunday
Lunch: Chipotle
Dinner: A family birthday party -- mom's night off
