BBQ Chicken Pizza

If you've read my menu more than once, you may have noticed that homemade pizza is almost always our meal for Saturday dinner. Frequently it's just standard-issue pepperoni pizza, usually with a half pizza reserved for veggies-only for mom and Peach. But, occasionally we mix it up and have BBQ Chicken Pizza. This pizza has a great flavor combination with the convenience of a pizza crust. I think we first had it at CPK, but it doesn't take a rocket scientist to put one together at home. In fact, homemade is always better because you can make it exactly the way
you like it.

I use a bottled BBQ sauce and doctor it up. If you have a brand that you like all by itself you can skip the doctoring up part and use 3/4 c. sauce.


BBQ Chicken Pizza

pizza crust for one pizza (my recipe below)
1 boneless chicken breast, cut into thin bite-size pieces
2 T. vegetable oil (divided)
garlic powder
salt and pepper to taste
1/2 c. bottled BBQ sauce
1/4 c. ketchup
1/4 c. brown sugar
3 t. soy sauce
one-half a large sweet onion, thinly sliced
1 T. butter
8 oz. shredded mozzarella (or a pizza blend)
3 - 4 oz. shredded sharp cheddar
vegetable shortening for greasing pan
1 t. cornmeal

Heat a large skillet over med-high heat and add 1 T. oil. Add chicken breast pieces and season with garlic powder, salt and pepper to taste. Cook for several minutes and turn, continuing to cook until pieces are completely cooked.

In the meantime, in a large measuring cup, combine BBQ sauce, ketchup, brown sugar and soy sauce. Mix thoroughly. When chicken is completely cooked through, add 1/2 of the sauce and turn heat down to low. Stir until chicken is coated. Turn off heat.

Place a saute pan over med-high heat and add 1 T. oil and the butter. When butter is melted, add onion slices. Cook, stirring occasionally until onion slices are caramelized (med. brown and very limp). Turn off heat.

Grease 16" pizza pan. Spread dough over pan all the way to the edges. Spread the remaining BBQ sauce mixture over dough. Place chicken pieces over the sauce, placing evenly throughout.

Sprinkle with mozzarella and cheddar.

Place caramelized onions over the cheese.

Bake at 450 degrees for about 10 - 15 minutes, until the cheese is golden brown on top and the crust is golden brown on the bottom, moving the pizza from the top shelf of the oven to the bottom if necessary.



Remove from oven. Cool for three to five minutes before slicing.


Pizza Crust

1 cup warm water
3 T. olive oil
1 T. sugar
1 1/4-ounce packet yeast (or 2 t.)
2 - ½ cups flour
1 t. salt


Place water in a bowl and add sugar. Sprinkle yeast over the surface and allow to sit for 10 minutes (until it foams). Add the oil, flour and salt and mix until smooth. Knead with dough hook for 3-5 minutes (or 7 minutes by hand). Place in greased bowl and cover with plastic wrap. Let rise for 1 hour, until doubled.

I did one on Saturday that used up leftover enchilada (homemade) sauce and colby-jack cheese...Wow!
You gotta love the versatility of pizza..altho a local place makes macaroni and cheese pizza which to me is a BUT much...:P

Looks delish. I do a similar one and add fresh cilantro. Got the idea from Rocky Mountain pizza. So good!
