Pumpkin Chocolate Chip Squares


These Pumpkin Squares are a favorite with everyone in the family -- and many teachers that my husband works with. Some even
ask for them. For our cookout on Saturday, I had s'mores fixin's on hand, but in case of rain I also made these moist, yummy squares. The last few little pieces were eaten for breakfast the next morning!


Pumpkin Chocolate Chip Squares

2 cups flour
1 T. pumpkin pie spice
1 t. baking soda
¾ t. salt
1 cup unsalted butter, room temp.
1¼ cups sugar
1 egg
2 t. vanilla
1 cup canned pumpkin
1 pkg. semi-sweet chocolate chips


Preheat oven to 350 degrees F.
Grease a glass or metal 13 x 9 pan.
In a medium bowl, whisk together flour, pie spice, baking soda, and salt; set aside.
With an electric mixer, cream butter and sugar on med. high speed
until smooth, beat in egg and vanilla until combined.
Beat in pumpkin puree (mixture may appear curdled).
Reduce speed to low and mix in dry ingredients until just combined.
Fold in chocolate chips.
Spread batter evenly in prepared pan.
Bake until edges begin to pull away from sides of pan
and toothpick comes out with just a few crumbs attached, 35 to 40 minutes.
Cool completely in pan. Cut into 24 squares.

** pumpkin pie spice: 1-1/2 t. cinnamon, 3/4 t. ginger, 1/2 t. nutmeg, 1/2 t. allspice.

Wow, thanks for the pumpkin pie spice recipe...that stuff is so expensive!!

I'll have to try this bar recipe, I love making pumpkin recipes in Oct and Nov!
