Baked Ziti with Sausage
8-10 servings
1 lb. mild Italian sausage, casings removed
2 T. oil
1 sml. onion, minced
28 oz. can crushed tomatoes
1 T. minced garlic
1 T. oregano
2 T. sugar
2 t. pepper
6 T. butter
¼ cup flour
2½ cups milk
¼ cup Parmesan cheese
1 lb. ziti, cooked
8 oz. mozzarella cheese, shredded
Brown sausage in oil in a large skillet. Add onion, tomatoes, garlic and spices. Cook 30 minutes, stirring occasionally.
Melt butter in a saucepan. Add flour and stir, but do not brown. Add milk and bring to a boil, stirring until thick, about 5 minutes. Remove from heat. Stir in Parmesan.
Layer ziti, Béchamel sauce and tomato sauce in buttered 13 x 9 pan.
Top with mozzarella. Place on a baking sheet and bake for 35 minutes.

It's uncooked weight -- not sure how your pasta is sold, but ours (as I'm sure you know) is sold in 1 lb. boxes.
