Weekly Menu -- June 11 through 17


Well, this week's menu might get turned upside down. My oven is out to lunch. And just like every other convenience in our homes -- we are always surprised how much we use something when we don't have it. I had to
buy bread. And on Saturday night, I had to make pizza on the grill -- which is good as long as you have a broiler to cook the cheese under. Fortunately my broiler still works, so I just did a lot of running back and forth between the grill and the broiler. Last night Doug's mom brought dessert, so she saved us then. The repairman is supposed to come tomorrow, so as long as it's repairable, my menu will be fine. Otherwise, I'll be improvising. The key to that is using what you have on hand and not make five trips to the grocery just to improvise. That's where the ingredient search at allrecipes comes in handy.

If my oven is fixed and I can make them, Tuesday's Sour Cream Cupcakes are really good. They are a doctored-up cake mix recipe. But they're much better than cake mix -- I'm pretty much a snob when it comes to mixes. I'll post the recipe on Tasty Tuesday. And Thursday's Raspberry Swirl Brownies are a doctored up brownie mix. They're also really yummy and would be great for a cookout. I'll post that recipe, too. And Sunday night's Toll
House Pie is a family six-thumbs up recipe. It seems most people have a similar recipe, but if you don't -- definitely try it.

Monday

Dinner: Dirty Rice, fruit salad, Corn pancakes, Chocolate pudding

Tuesday
Lunch: Bagels and cream cheese
Dinner:
Teriyaki pork chops, mashed potatoes, carrots, Sour Cream Chocolate Cupcakes

Wednesday
Lunch: Birds Nests
Dinner:
Grilled Sausage Burritos, guacamole, salsa, fried potatoes, Baked Rice Pudding

Thursday
Lunch: Cheesy Enchilada Soup
Dinner: Cajun Chicken Bourbon Bites, rice, vegetable, Raspberry Swirl Brownies

Friday
Lunch: Cheese pizza
Dinner: Salmon Tetrazzini, vegetable, bread, Pound Cake

Saturday
Lunch: Skyline
Dinner: St. Charles freshman picnic


Sunday
Lunch: BLTs, chips
Dinner:
Pulled pork sandwiches, cole slaw, oven fries, Toll House Pie & Homemade Ice Cream
