Cupcake Rosary

I started baking very early this morning. Wednesday is our busy afternoon, and with homeschool P.E., Peach's gymnastics, and picking up high school boy, I'm gone from about noon to 4 p.m. But, I've wanted to make a cupcake rosary for so very long, and for whatever reason never had. Today, I was determined to do it. So, at 7:30 a.m., I was making cupcake batter.

It was worth it, though, because the kids think this is pretty cool -- a rosary made from cupcakes. I doubled this mini cupcake recipe and baked them for 9 minutes each. I only filled each mini-cupcake paper half full, because any fuller than that they touched the pan and made for messy removal. And I didn't use the whole batch -- just enough for 60 cupcakes -- 59 prayers and one for the center (with a few extra for safety). I used this frosting (one and half times). Peach helped me sprinkle, using a different color for each decade.

A little tip for filling those tiny mini cupcake papers -- place half of the batter in a zip-top bag, squeeze out the air and zip. Snip a bottom corner about 1/4 inch and use it to squeeze batter into papers. When bag is almost empty, fill with remaining batter.
