Yesterday was a very busy day -- I had little things to keep me busy around the house, had to return my son's prom tux, as well as help one kid with a history research paper. I knew that I would be busy for several hours (like five!) with him, so I did most of my dinner prep in the morning, including making dessert. I almost skipped dessert, since it was a new recipe, and I wasn't sure I really had time to mess with it. I'm glad I didn't skip it however, since it was very easy to prepare and a really yummy end to the day.
The recipe is found here, and since I pretty much followed the instructions, I won't re post it here. The only change I made was to put all the vanilla wafers in the food processor, make crumbs out of them, then add the flour, sugar and butter and pulse until cookies and butter were crumbly. I skipped the lemon peel before serving as well, but did give each piece a sprinkle of powdered sugar. These squares would be doubly delicious with a spoon of real whipped cream.

I LOVE lemon bars!!! They are the perfect summer treat. I'll have to give this recipe a try!

These are a little different than a traditional lemon square (I have a great recipe for those if you want one). These are more like a cheesecake square -- but lemony nevertheless.
I can't wait to try this! They sound so good!
