Weekly Menu

A few notes on last week before I start on this week -- you may have read that the Sweet Potato Pancakes were a hit. The Potato Lasagna was a hit with five out of six, so that will be on the menu again. Annie's Pot Roast on Sunday and again for sandwiches on Tuesday was a huge hit. Having grown up on "onion soup pot roast," I had no idea pot roast could be so good. I've not made it very often in our married life because I just wasn't crazy about it. But, I am crazy now, and it worked out great in the crock pot. I cut the liquid in half per Annie's suggestion and had plenty for gravy and plenty leftover for au jus with the sandwiches. Since I bought two roasts for $12 (b.o.g.o. at Giant Eagle), that works out to be $6 for meat for two meals. Sunday's sides were cheap, as were Tuesday's, so I did pretty well per serving.

This week, being Thanksgiving week, will be a little simple on the other days, except for Tuesday, which is Doug's birthday. He chose the menu -- it's pretty much what he chooses every year. The whole gang will be home all day from Wednesday on, and after Wednesday night we could have company for any meal with little notice. So, I've kept it simple and planned meals that can be expanded for a crowd.


Sunday
Brunch: Sausage gravy and biscuits, eggs
Dinner: Honey Soy Glazed Chicken, Panda Express Chow Mein, stir fried vegetables, leftover Lemon Pound Cake from Saturday

Monday
Lunch: Bagels and Creamy vegetable spread
(roast beef sandwich, veggies, chips)
Dinner: Onion Soup with Cheese Toasts

Tuesday -- Big Birthday Boy (he's 47!)
Lunch: Meat and cheese roll-ups
Dinner: Marinated Rib Eye steaks, Twice Baked Potatoes, French Bread, salad, Custard Pie

Wednesday
Lunch: Mini Ham and Cheese Quiches, veggies
Dinner: Loosemeat sandwiches, Baked beans, fruit

Thursday -- Thanksgiving
Brunch: Overnight French Toast

Friday
Lunch: what else? Turkey Sandwiches, stuffing and gravy
Dinner: Pizza


Saturday
Lunch: Skyline Chili
Dinner: Burgers, oven fries, any leftover vegetables

I'm so glad you liked the pot roast - and now I know it can be done in a crock pot!
