Peppermint Pattie Brownies

I had a hankering for chocolate mint last week, so I made some brownies to take with us to Light the Night. If you are not familiar with this event, it is a walk to support the Leukemia and Lymphoma Society. Anthony's National Honor Society chapter supports the society by getting pledges and walking, and it is a really neat event. They only walk a mile, but they walk after dark and the walkers carried balloons with lights inside. It was really beautiful to see so many lit balloons bobbing up and down with the walkers (my guess is that there were over 5000). Anyway, we tailgated with pizza and I took brownies to share with the boys who were walking. They loved them.

The cool thing about these brownies is that the peppermint
pattie melts into the brownie batter and you just end up with moist, minty brownies. Sorry, no pictures -- they were gone!

Peppermint Pattie Brownies

1 - ½ cup butter, melted
1 t. baking powder
1 T. vanilla
5 eggs
2 cups flour
1 cup cocoa
3 cups sugar
1 t. salt
24 peppermint patties

Preheat oven to 350 degress F. Grease 13 x 9 pan.
Stir or whisk butter, sugar and vanilla. Add eggs.
Add dry ingredients and blend well.
Reserve 2 cups of batter.
Pour remaining batter into pan and smooth.
Arrange peppermint patties on top (6 wide, 4 deep).
Press patties into batter, slightly.
Top with reserved batter. Bake 45 to 50 minutes.

These will not test toothpick done -- just cook them until the edges and top are done.
