The cool thing about these brownies is that the peppermint pattie melts into the brownie batter and you just end up with moist, minty brownies. Sorry, no pictures -- they were gone!
Peppermint Pattie Brownies
1 - ½ cup butter, melted
1 t. baking powder
1 T. vanilla
5 eggs
2 cups flour
1 cup cocoa
3 cups sugar
1 t. salt
24 peppermint patties
Preheat oven to 350 degress F. Grease 13 x 9 pan.
Stir or whisk butter, sugar and vanilla. Add eggs.
Add dry ingredients and blend well.
Reserve 2 cups of batter.
Pour remaining batter into pan and smooth.
Arrange peppermint patties on top (6 wide, 4 deep).
Press patties into batter, slightly.
Top with reserved batter. Bake 45 to 50 minutes.
These will not test toothpick done -- just cook them until the edges and top are done.
