menu...June week 3

My husband decided last week that we absolutely have to replace our living room, dining room, kitchen and front hall floors NOW. I thought folks were supposed to mellow as they age, but my husband seems to get more uptight as he gets older. When he wants to do something, it gets done now, no matter what other needs there are. It's veeeeerry frustrating.

So last week we shopped for wood floors, compromised on color (I won -- Ol' Virginia Gunstock) and structure (he won -- solid wood), and found an installer. This week we have to pack up everything in the kitchen island, pantry, and china cabinet, move out the stove and fridge, and tear out the old floor and toe kicks. No problem (sarcasm). Next Monday the installer will begin putting down the new floor.

So this week's meals have to be simple, and next week's meals will probably be take-out. Ugh. If you notice a lot of eggs on my menu this week it's because I have started buying three dozen a week from a friend who has a lot of extra eggs, and I haven't kept up on the consumption.

Monday: Chilaquiles, fruit salad

Tuesday: Pork Tenderloin with Korean Wet Rub, fried rice, broccoli

Wednesday: Quiche Lorraine, green salad, bread

Thursday: Grilled chicken, Mac and Cheese, vegetable

Friday: Tostada Pizza
