Weekly Menu


Armed with a stack of cookbooks, I'm headed to the kitchen for some heart healthy cooking. I've learned a lot this week, about different kinds of fats, good and bad, and the effects of antioxidants and fiber in our diets. It's interesting stuff, really it is. I will try to pass on little tidbits here and there as I pass on good recipes.

Saturday
lunch: Turkey and Cheese Panini, baked chips
dinner: Pizza and Salad Pizza

Sunday
lunch: French Toast cups, turkey sausage, fruit and yogurt
dinner: Steak Diane, Roasted Garlic Mashed Potatoes, Pan-Roasted Brussel Sprouts

Monday
lunch: Tuna and White Bean Wraps
dinner: Turkey Cutlets with Avocado Salsa, Peppered Couscous, tossed salad

Tuesday
lunch: baked potatoes with veggies and low-fat cheese sauce
dinner: Tortellini soup, bread

Wednesday
lunch: grab a bite out
dinner: Spicy Honey-Brushed Chicken Thighs, Pan-roasted potatoes, steamed broccoli and carrots

Thursday
lunch: Turkey and salad wraps
dinner: Grilled Brats and Bacon and Onion Potato salad (mom is out)

Friday
lunch: Sunbutter and jam on wheat bread
dinner: Chopped Nicoise Salad, Stoneground Whole Wheat Bread

  1. Barbara, do you know anything about cooking for a diabetic? I am the one who commented on your Chicken Stew recipe last week, and I would like to make it for our pastor and a visiting Redemptorist priest who is giving a mission for us in March. The mission priest is a diabetic. Each day of the mission one family will be cooking, and I get one of the days. I thought the chicken stew would be good, but he has to limit carbs, so do you think less potatoes & maybe some green beans? Any ideas would be helpful! Thanks--Laura

  2. Hi Laura,
    My sister-in-law is diabetic and I cook for her whenever my brother's family is in town. She does not watch her diet as strictly as she should; she accommodates with amount of insulin she gives herself before or after meals. That said, I think carrots in the chicken stew would be worse than the potatoes in terms of raising sugar levels, but I really think the dear priest would be better able to just take the amount of food he should eat, depending on how much sugar/carbs he has eaten during the day. The chicken stew would be a good meal, maybe with a side of green vegetables or salad and some whole wheat bread.

  3. Thanks, Barbara! I was thinking of a cucumber salad with oil & vinegar dressing. I second another comment on here--I would buy a cookbook of yours as well!
