Weekly Menu

This week is our first week back to school. That means packing some lunches, cooking some at home, and a busy dinner hour with dad and the high school kids walking in the door at 5:30 and getting dinner on the table so they can start their homework.

I'm trying a few new Crock Pot recipes this week, to make life easier, and having some quickie dinners as well.

Pork Loin roasts were on sale for $2 per pound at Giant Eagle this week. So, I bought two roasts and will cook one in the Crock Pot, and use half of one for Garlic Chicken (a Chinese stir-fry dish). I'll freeze the other half to use another time. I really try to plan our meals around the grocery sales. Pork Loin roasts are one of those versatile cuts of meat that you can use for a variety of purposes, so getting a sale of $2 is wonderful for the budget.

Monday's Crock Pot Enchilada Casserole is from Saving Dinners -- I'll let you know what we think; I've never made it before.

I'll publish Friday's Caramel Corn Puffs because they are a yummy treat, and a good recipe to have in around.

Monday
Lunch: Mama and littles eat out -- First day of school
(packed lunch -- ham and swiss sandwich, Cheez-its, carrot sticks, candy bar)
Dinner: Crock Pot Enchilada Casserole, Cabbage Salad, Toll House Cookies

Tuesday
Lunch: Leftover pizza, fruit
(packed lunch -- roast beef and provolone sandwich, chips, celery sticks, cookies)
Dinner: Crock Pot Garlic Pork Roast, Mashed potatoes, Beer Bread, Cucumber Tomato Salad, Applesauce Cake

Wednesday
Lunch: Ham sandwiches, chips, and grapes
(packed lunch -- ham and swiss sandwich, Cheez-its, carrot sticks, candy bar)
Dinner: Bacon Eggs, Coffee Cake, Fruit salad

Thursday
Lunch: Tuna sandwiches, carrot and celery sticks
(packed lunch -- roast beef and provolone sandwich, chips, celery sticks, cookies)
Dinner: Pork in Garlic Sauce, White Rice, peaches, Bread pudding

Friday
Lunch: Scrambled egg sandwiches
(packed lunch -- peanut butter crackers, carrot and celery sticks, candy bar)
Dinner: Salmon Patties, Macaroni and Cheese, Peas

Saturday
Lunch: Skyline chili
Dinner: Homemade Pizza, Caramel Corn Puffs

Sunday
Lunch: Sausage gravy and biscuits, eggs
Dinner: Going to a cookout
