My husband used 1/2 brown sugar and melted the butter so maybe that was the reason. Still soooo good. They will be my go to cookie, well that and pizzelles which I love to make. That's the way I ...Anne, Mine are pretty flat, too. That's the way I like them. If yours got too flat, it could have been the fat to dry ratio (since you were short on cocoa). But mine didn't tu...I did make these this morning. But mine didn't turn out so great. Sigh. For one thing I had to use magarine instead of butter (maybe that's why they're so flat?).
